  1. Watching the Roosters play the Dragons at Homebush;
  2. Dancing in the mud and listening to tunes at Parklife;

What Sydney people should be doing on this very, very wet long weekend:

BAKING! (Of course!!)

Raspberry Coconut Slice

  1. Preheat oven to 180°C. Grease 20cm x 30cm lamington pan and line with baking paper, extending 5cm over long sides.
  2. Beat 90g butter, 1/2 cup caster sugar and 1 egg in a small bowl with an electric mixer until light and fluffy. Transfer to a medium bowl, stir in 1/4 cup SR flour, 2/3 cup plain flour and 1Tbs custard powder. Spread into pan; spread with 2/3 cup raspberry jam
  3. Combine 2 cups desiccated coconut, 1/4 cup caster sugar, 2 eggs (beaten lightly) in a small bowl. Sprinkle over jam. Bake about 40 minutes. Cool in pan.

  • I haven’t made one of these since I was a kid, my Gran was the Raspberry/Coconut Queen. Good memories.
    I headed over to the Mudgee Wine Festival…, was still raining but hey, who cares right!!?

  • Oooh do you have a special recipe?!?! You know what they say about sharing! I love my Nan’s recipe for Aunt Maud cake – sultanas, peel and lots of butter. Yumo!

    I realise now that no-one saved me a piece of the delicious looking raspberry coconut slice(in fact as I think of it ,no-one even mentioned it’s existence during my recent stay in Sydney!) Despite this slight glitch I had the most wonderful holiday with my two darling children and their delightful partners and ate lots of scrummy food, the unbelievable,outstanding,fantastic,and mind blowing restaurant experience being Spice Temple. Thank you NB!!!!!!

    • What a gross oversight! Although between Brown Sugar, Forbes & Burton, David Jones Food Hall, Bocconcini/Tomato sourdough in Surrey…would there have been room?!? What am I saying – there’s always room!
