My girlfriend, Miss Austria, is getting married! Hooray!!

I simply love engagements! I clap my hands and squeal in eager anticipation for all the proposal details and wedding plans and Miss Austria’s tale is one of fairytale proportions! As a water-babe through and through Mr O really hit the mark with a wine and cheese picnic proposal overlooking Sydney Harbour (Ladies! Gaaaaaah!!) The wedding is planned for July 2012, somewhere in Europe with an ocean view and a ship’s Captain for celebrant!

In keeping with the water theme I thought a seaside inspired bridal shower was in order.

What with the weather heating up and a calorie-laden couple of weeks ahead to Christmas I wanted to keep the menu simple and fresh! An indoor beach-style picnic at my place would be ideal, out of the sun but with a picturesque view of north Bondi Beach and Rose Bay. Ten giggly ‘chickens’ decorated with blue balloons, white streamers and sea shells while I was in the kitchen putting the finishing touches on the menu.

What a lovely way to spend the afternoon, chatter, laughter, good food, a glass of bubbles! And the look on Miss Austria’s face when she walked into the room was truly priceless! Cheers to that!

MENU:

Micro Salad Prosciutto Wraps

Spinach and Ricotta Quiche

Dainty Chicken Sandwiches

Choc-Dipped Strawberries

Sailor-Blue Cupcakes with royal icing hearts

Champagne

 

 

 

Micro Salad and Prosciutto Wraps

24 baby green beans, tops trimmed

2 cups micro salad leaves or wild rocket

2 tbs toasted pine nuts

2 tbs freshly grated parmesan

1 tbs extra virgin olive oil

Juice of 1 lemon

12 thin prosciutto slices (plus I did 12 with marinated eggplant slices for the vegetarian guests)

 

Place the beans in a bowl, cover with boiling water and leave for 1 minute. Drain and refresh under cold water.

Combine the beans with the salad leaves, pine nuts and parmesan. Drizzle with oil and lemon juice, then season.

Lay out prosciutto slices, put a handful of bean mixture on each, then roll up.

Drizzle with balsamic and chilli flakes before serving.

 

Dainty Chicken Sandwiches

Serves 6

3 poached chicken breasts, shredded (or 1 family size BBQ chicken, skin removed, meat shredded)

4 generous tablespoons good quality, whole egg mayonnaise

6 chives, chopped

Wholegrain bread, crusts removed, sliced into 3cm lengths

 

Combine chicken, mayo and chives.

Place mixture neatly on top of bread and replace its ‘lid’.

Yum!
