The Pudding Queen.

The Pudding Queen is one of my best friends. She lives in Brisbane, doing Opera singing at the Conservatorium of Music and is a very busy woman. We’ve always shared a passion for food and used to give each other family recipes as birthday presents when we were broke high school students – she should be proud to know that mini pizzas c.2005 still make an appearance at all drinks and nibbles occasions! And just like me The Pudding Queen takes her stress out in the kitchen, with a result that is droolingly spectacular! But that’s enough from me, let’s hear it from the source, or should I say sauce?! (Sorry, I couldn’t help it!!)

 

Butterscotch Self-Saucing Pudding

Here is the recipe if it’s of any use for your blog…. approximate only, I have a tendency not to measure things and improvise as I go….

Pudding:
2ozs butter
1/4 cup caster sugar
1/4 cup brown sugar
1 egg
2 tsp vanilla extract
1/2 cup milk
1 cup self raising flour.

Combine using same process of making a cake, you know: cream butter + sugar, add egg, alternate adding flour and milk. Put in medium sized pudding bowl.

Sauce:
3 tblsp cornflour
1/2 cup brown sugar
1 1/3 cups boiling water
Seriously decent (read: excessive) splash of butterscotch shnapps.

Combine cornflour and sugar, sprinkle over pudding. Pour water and schnapps gently over the top.

Bake for around 40 min (depending on uselessness of oven, maybe longer) in a hot oven.

I think this should probably have a sugar overload warning attached for lesser mortals who care about such things….
