Fundraiser for RSPCA – Cupcakes!

Every year, the RSPCA NSW cares for and protects our state’s neglected, abused, injured and strayed animals. Last year, a staggering 46,558 animals came to the RSPCA NSW for help.
The RSPCA is NOT an agency of the Australian Government and therefore relies on the generosity of the community to continue it’s vital daily work. Along with our shelters, volunteer branches and Inspectorate, we also fund an Education team that visits schools, universities and community groups to educate the importance of treating all living things with kindness. Other programs we fund include offering a safe bed to pets of domestic violence victims, a support program for pets of elderly people and de-sexing programs in rural and indigenous areas.

Vanilla Cupcakes (12)
Preheat oven to 180C (fanforced) or 200C.
Sift 1¾ cups self raising flour into a large mixing bowl. Should you be like me and realise that you don’t have SR flour when you set out to bake 75 cup cakes, fear not! Remember the rule that adding 2 tsp baking powder to 1 cup plain flour makes it rise!
Add 125g butter, at room temperature & cubed, 3/4 cup caster sugar, 1 tsp vanilla extract, 2 eggs, lightly beaten, and 1/2 cup milk.
Beat 5 minutes, until pale and creamy.
Divide between cupcake cases and bake 15-20 mins until springy to the touch.
(To make chocolate cupcakes omit 3 tbs flour and add 3 tbs cocoa powder. Add a dash extra milk.
Decorating
Chocolate icing – beat 125 g butter, room temperature, with 150 g melted chocolate. Add 1/4 cup sifted icing sugar and beat until combined and fluffy.
Plain – beat 125 g butter with 1/2 cup sifted icing sugar and a dash of milk. Add food colouring as desired
Cut triangle centre shapes out of cake, fill with jam and whipped cream and create butterfly cakes. Sift icing sugar over the top to decorate.
